Lasagne, take 2


Jeez, what's up with 3 posts in one day?? There's no new posts for days and days, then suddenly, a flurry of kitchen activity...

Anyway, tried the lasagne again with the spinach, mushroom and onion mixture - and it turned out okay. Still think it's missing something, flavor wise. Perhaps bell peppers? More garlic? Hmmm... the research continues...

Stuffed zuchini


I'm not entirely sure, but I think my sister may have some zuchini growing in her garden - which means we'll all be swimming in zuchini soon! In preperation of the onslaught, I thought I'd practice.

This zuchini is stuffed with onion, garlic, zuchini, bread crumbs & seasonings, then topped with a sprinkling of vegan parm topping and baked until golden.

Verdict: Tasty, definitely repeatable.

Trader Joes = vegan time saver


I love that TJ's has some prepackaged cut up veggies. This is a stir fry mix of bok choy, snow peas, greens & broccoli. I just added some tofu and a little soy & sesame oil - and dinner was ready!
